Thanks to Frugally Sustainable. I used red chard, 1 cup of chickpeas, added minced garlic and cooked the quinoa in stock for added flavor.  Easy and delicious way to eat more eggs for dinner. Also thanks to Sasquatch Mesa Farms for the yummy pastured organic local eggs!
